Crispy Chicken Ramen Recipe

Serves: 4
Ingredients
· 2 eggs at room temperature
· 2L chicken stock
· 100ml mirin
· 100ml soy sauce
· 1 tbsp sesame oil
· 1 tbsp chopped garlic
· 1 tbsp chopped ginger
· 2 cobs corn
· 4 portobello mushrooms
· 1 lime, juice and zest
· 4 chicken thighs
· Flakey salt
· Olive oil
· 2 spring onion sprigs, chopped
· 1 sheet of nori cut into quarters
· 270g ramen noodles
Method:
1. First, prepare your eggs with Nick’s soft boiled egg hack: Pricking the bottom of the shell with a pin ensures a perfect egg every time and makes peeling it easier. Bring a pot of water to a boil. Add eggs to water and cook for 6 mins before placing them into ice bath and peeling.
2. Place the chicken stock, mirin, soy sauce and sesame oil into a pot and bring to a simmer. Add the chopped ginger and garlic.
3. Slice the kernels off 2 cobs of corn and finely slice 4 portobello mushrooms. Add juice and zest of the lime to them both and continue to simmer.
4. Sprinkle flakey salt over the surface of the chicken. Bring a heavy based pan to high heat and add olive oil then the chicken thighs. Nick’s hot tip for super crispy chicken: Add weight on top of the chicken and apply pressure - another pan will do. This ensures the chicken gets crispy while staying juicy and moist inside.
Cook for 3-4 mins until golden then flip over for 1-2 minutes until cooked through and set aside to rest.
5. Bring a pot of water to boil and cook ramen noodles as per instruction on the packet.
6. Construct your ramen - add the broth, noodles, sliced chicken, halved soft boiled egg, chopped spring onion and nori. Garnish with chilli flakes or chilli oil for an extra kick if you like. Dig in and enjoy!
